Spiked Rainbow Ribbon Salad makes a beautiful addition to any party. The result is a “cocktail” version of the classic, with all the sweet, creamy, layered rainbow goodness of the original. Valentines Day - alternate layers of watermelon (pink) and cherry, raspberry, or strawberry jello. Layered jello molds are easier to make than you think. Empty cherry Jello package, 1/3 of cream cheese and one cup of boiling water into blender. Make sure the pan is sitting completely flat. Pour into a 9x13-inch pan and transfer to the refrigerator. Pour into a 9 x 13 baking dish and allow to chill on an even surface in the refrigerator until fairly well set. Bottom (purple) layer: Dissolve a 3-ounce package of grape flavored jello with 1 teaspoon of unflavored gelatin ( envelope of Knox unflavored gelatin) in 1 cup of boiling water by stirring until completely dissolved. ![]() Stir in mashed bananas to the large bowl of jello. Remove 2 cups of jello mixture and set aside until later. Given its iconic status, the Rainbow Ribbon Salad was due for a little spin, JSTK style. Add frozen raspberries and crushed pineapple, undrained, to jello. It is also certainly as enthusiastically received as any celebrity/pop star/actress/TV personality! Not surprising, really – this layered concoction is the J-Lo of jiggly desserts - down to earth and completely approachable, yet strikingly lovely. I did some (unsuccessful) research to identify the author of the original recipe for Rainbow Ribbon Salad, which has been the holy grail of American gelatin desserts for as long as I can remember. ![]()
